Nutella No Bake Bars

No Bake Nutella Bars – turn a classic no bake cookies into a quick and easy bar with lots of creamy Nutella.

If there is one thing that I like it is desserts that don’t require baking. Especially in the middle of summer when you really don’t want to turn on the oven. There are so many great options, but if you are a fan of chocolate and Nutella, then you are going to love these!

Nutella bars are a twist on classic No Bake Cookies. Only there is no scooping individual cookies and they are loaded with chocolate hazelnut spread to make them extra delicious.

These have been on the blog for long time, but it was time for a little facelift. Better pictures and more helpful instructions are no included. But it is still the same great recipe, so if you have made them before, don’t worry they will be the same!

What You’ll Need

  • Butter
  • Granulated Sugar
  • Cocoa Powder
  • Milk
  • Nutella
  • Vanilla Extract
  • Old Fashioned Oats

How To Make No Bake Nutella Bars

  1. In a saucepan melt the butter over medium heat. Add in the sugar, milk, and cocoa powder. Bring the mixture to a full boil and cook for 1 minute, stirring frequently.
  2. Remove the pan from the heat and stir in the Nutella and vanilla until it is melted anc combined.
  3. Stir in the oats until everything is well coated.
  4. Pour into an 8-inch baking dish that is lined with foil or parchment paper.
  5. Allow to cool and set up for 2 hours before slicing to serve.

My Bars Didn’t Set Up

These are the same concept as when you are make Peanut Butter No Bake Cookies. If yours don’t set up, it really comes down to letting the mixture boil long enough. You are basically making a candy, by melting the butter and sugar together. So you need to make sure it cooks long enough for the sugar to set up. Having the mixture come to a full boil, and then cooking for a full minute, is what it takes. Use a TIMER!!

What Kind Of Oats To Use

You really can use whatever you have. I prefer to use Old-Fashioned Oats for these bars. They help the bars have a solid structure and give them a slightly chewy texture. But if you just have quick cooking oats, they really will set up and work just fine.

Storage

Once the bars are completely set, you can slice and store them covered for about a week. They do not need to be refrigerated, but if your house is warm, they may not stay completely solid. I like to store them in the fridge, so they stay perfect just a little but longer.

You can also freeze Nutella Bars. Store in an airtight container for up to 5 months. you can individually wrap the bars, or store a whole pan. Just make sure to tightly wrap and store in something airtight, so they don’t dry out.

  • Remove from the heat and stir in Nutella, vanilla, and oatmeal.
  • Pour mixture into a lined 8×8 inch pan, or drop by the spoonful onto a lined cookie sheet. Put in fridge to harden.
  • I think they are best eaten cold, so I always keep mine in the fridge. Enjoy!

  1. I have to tell you… We are on a Nutella kick right now, so these were perfect! I actually put them straight in the freezer and that helped us not eat them right away!! Thank you, they are perfect!

    Please tell me how much (in grams or ounces) ‘a stick’ of butter is. We don’t have our butter packaged like that here (South Africa). Thanks

  3. These are gluten-free correct? What kind of oatmeal did you use? I found rolled oats which I think are the same thing?

    1. Rolled Oats will work perfectly! I believe some oats have gluten, so you will just want to check those. But yes, I believe they are gluten free!

    1. The oatmeal is what gives it body, so I am not sure you could just skip it. Maybe you could use something like rice krispies in its place (probably not the full amount though). I worry just skipping it would leave just blobs of melty chocolate.

      1. Hi Erin, I would like to try this recipe with Rice Krispies, can you guide me to how much I should use please?

      2. I am not sure exactly how many you would use. I might start with 1 cup, and see when you are stirring them in how thick it gets. You can always add more! Let me know how it works!

    1. I am not sure. It might just melt in with the butter. You could try it though, I have never thought about it. Let me know!

Made a healthified version that tasted amazing! used 1\3 raw sugar and 1\8 honey in place of 2cups sugar, 1\2 cup pb (did not try natural) instead of the butter, increased the oats to 3 cups and added 1\2 cup oat bran along with a tablespoon or two of flax meal! Formed them into 1T. size balls and they are now in the freezer. 🙂 These would still be high in sugar and fat but alot less then before! 🙂

  5. Amazing recipe that is so quick and tasty! I always get nervous making something new for a pot luck, but I couldn’t resist trying this recipe for a pot luck I’m going to tomorrow and I they taste great! They won’t get too hard if I leave them in the fridge all night, right?

    1. They will be great in the fridge overnight. I would just take them out at least 30 minutes before you want to serve them, so they soften up a little bit. Hope you enjoy!
