Cajun Sausage Pasta is a great way to spice up your weeknights! One pan, 25 minutes, and you have dinner on the table! Creamy pasta with lots of Cajun flavors and your favorite sausage.
Getting dinner on the table each weeknight can be a chore. Coming up with what to make each night just never ends! So I love having a few recipes that I can just turn any night of the week when I don’t have anything planned. And when it uses only 1 pan and is ready in 20 minutes that is even better!
My family loves Cajun flavors, so this is one of the most requested dinners in my house.

This Cajun Sausage Pasta is full of Cajun flavors with both seasoning and using Andouille sausage. You can really use any smoked sausage you like, but to up the flavors and make this really come to life I like to use spicy andouille sausage.
What’s In Cajun Sausage Pasta

- Short Cut Pasta – any shape you like works great! I used bowtie in this version, but you can use penne, rotini, or whatever you have.
- Andouille Sausage – if you want to cut down on the spice you could use a different smoked sausage, but it will alter the flavor some.
- Onions
- Garlic
- Chicken Broth – you can use low sodium to cut down on salt if desired.
- Heavy Cream
- Milk – I like to use both heavy cream and milk so it gets some rich and creaminess, but also cuts down on the fat and calories a little. You could definitely use all heavy cream if you prefer.
- Parmesan Cheese
- Cajun Seasoning – you can use store bought cajun seasoning, but I really like my Homemade Cajun Seasoning as it isn’t as salty and is super easy to make.
- Green Onions

How To Make Cajun Pasta
- Cook Sausage. In a large skillet brown the sliced sausage and onions together for about 5 minutes, until the onions are soft and the sausage is browed. Mix in the garlic and cook for 1 minute until you can just start to smell it.
- Make Pasta. Add in the dried pasta, chicken broth, heavy cream, milk, Parmesan cheese and Cajun seasoning. Stir until it is all combined and bring the mixture to a boil. Reduce the heat, cover and cook for about 10 minutes until the pasta is fully cooked.
- Serve. Once the pasta is tender and most of the liquid is absorbed, remove from the heat and taste to see if you want to add more Cajun seasoning. Start with small because it does make the mixture spicy. Sprinkle with green onions to serve.

Recipe Tips & Tricks
- You can use any smoked sausage, even turkey sausage for this recipe if you want to cut down on fat and calories more. I like Andouille sausage for the Cajun flavors, but you can use any sausage you have.
- Use any shortcut pasta for this recipe. Rotini, Penne, Bowtie, Cavatappi etc. I like to use short cut pasta, so you can serve it easily and get a little bit in each bite with the sausage.
- Start small with the Cajun seasoning. A little can go a long way if you aren’t used to the spice. So taste and adjust. You can always add more, but can’t take it away.
- Milk and heavy cream are both called for in this recipe because I like the flavor and texture of heavy cream, but like to cut down a little on the fat and calories with the milk. You can use all heavy cream if you like. But I wouldn’t use all milk as your sauce will just be runny and thin.

Storage
This one pan dinner is ready in about 20 minutes and makes a great weeknight meal. Even with just a couple of us, I love to make the full recipe to have lunches for the next couple of days. Store in an air tight container in the fridge for 4-5 days.

One Pot Cajun Pasta
Ingredients
- 1 pound Andouille Sausage or your favorite smoked sausage
- 1 small Onion, finely chopped
- 2 cloves Garlic, minced
- 1 pound short cut pasta
- 4 cups chicken broth
- 1/2 cup heavy cream
- 1/2 cup milk
- 1/2 cup Parmesan Cheese
- 1-2 tablespoons Cajun Seasoning
Instructions
- In a large skillet, over medium high heat, brown sausage and onion together for 5 minutes; until sausage is browned and onions are tender. Add garlic and cook for 1 minute until fragrant.1 pound Andouille Sausage or your favorite smoked sausage, 1 small Onion, 2 cloves Garlic
- Add pasta, chicken broth, heavy cream, milk, parmesan cheese, and Cajun seasoning to the pan. Stir until well combined.1 pound short cut pasta, 4 cups chicken broth, 1/2 cup heavy cream, 1/2 cup milk, 1/2 cup Parmesan Cheese, 1-2 tablespoons Cajun Seasoning
- Bring to a boil, cover and reduce to a simmer. Cook for 10 minutes until the pasta is cooked, stirring occasionally.
- Adjust the Cajun seasoning to your desired heat level.
- Serve immediately.
