Chocolate Mug Cake with Cherry Whipped Cream

Chocolate Mug Cake w/ Cherry Whipped Cream #recipe #chocolateparty

Have you ever tried a mug cake?  I have tried a couple, but have always been disappointed.  In the past all of them were too spongy, not at all the consistency I was looking for in a cake.  Well, all that has changed!  Thanks to Jessica, for removing the egg from the equation and giving us a decadent chocolate mug cake.

Have you met Erin from Texanerin Baking?  She is amazing at making desserts a little better for you.  Erin has quickly becoming one of my close blogging friends, even though she lives 1/2 way around the world.  Currently Erin is in Germany, but is originally from Texas (hoping to move back in the next couple years).

Chocolate Chip Cookie Brownie Bars

Chocolate Chip Cookie Brownie Bars #recipe

Before we start – did you know I have a giveaway going on?  Don’t miss your chance to win FREE Alexia Food products?

Let’s talk desserts for a second.  What is your favorite?  I am a brownie lover to the end.  There is just something about a rich, fudgy brownie that I can not say no to.  But, then I remember chocolate chip cookies.  Fresh out of the oven chocolate chip cookies.  And it makes me think twice.  I don’t really like having to think so much when it comes to dessert.  So I solved that.

Where do you do your shopping?

#cookingwithspreads

This is a sponsored post written by me on behalf of Unilever.

Are you loyal to a certain grocery store?  Do you shop at more than one?  Why do you shop where you do?  Recently I was asked by Unilever (makers of I Can’t Believe It’s Not Butter!® and Country Crock®) to go to Walmart as part of a #cookingwithspreads campaign, and to share my experiences with you.

#cookingwithspreads

Right after I got married, almost 12 years ago, they opened up a Super Walmart about 1 mile from my house.  Needless to say, that is where I did my shopping.  As a newlywed the affordable prices and convenience won me over.  Even after 2 moves that is where I continue to shop.  Walmart carries a wide variety of brands, and products that I have learned to expect to be part of a grocery store.  I personally am a big fan of their produce department.  I can always find what I am looking for, it is fresh, and reasonably priced.

#cookingwithspreads

Plus, how convenient is it that I can get my toothpaste and shampoo in the same place I am buying ground beef and cheese.  When my son was little he would always get 3 minutes to look around in the toy department if he was good while we did the rest of the shopping.  Pretty good reward system, I must say :)

#cookingwithspreads

As part of this campaign I get to create a recipe using I Can’t Believe It’s Not Butter!®.  I am still trying to decide what I should make.  I have a couple of savory ideas; shrimp scampi or a baked chicken nugget.  I have also been thinking about muffins or pancakes (you know I love them both). What do you think I should make?  Stay tuned to see what I make, and get a chance for your own Walmart gift card!

Cooking your favorite recipes using Unilever buttery spreads is a deliciously smart move. With 0g trans fats per serving, less saturated fat and fewer calories than butter, cholesterol-free spreads are a better option.

Thursday Things

I am a little late in getting this up, but here it is!  As many of you know I went to Orlando a couple of weekends ago for the Food Blog Forum.  This was my first food blogging conference, and it was such a great experience.  I got to meet so many wonderful people, and listen to some amazing speakers.  Not to mention the conference was held at Walt Disney WorldJulie and Lindsay did an awesome job organizing the weekend, and making sure everything was perfect!

We stayed at the Grand Floridian for 2 nights, and the place is just gorgeous.  I arrived in my room to find Mikey Mouse out of a towel on my bed.

The first night we had a reception to get to know everyone.  We were given a few small appetizers to try.  Everything was presented to perfection.  Disney really does pay attention to every last detail.

After the reception a group of us headed off to Magic Kingdom.  We waited outside of the Grand Floridian to take the monorail into the park.

The next morning started bright and early with breakfast served to start the conference.  How cute are these bowls to serve fruit.

Lunch meant cupcakes. And lots of them!  They had all kinds of other great food too, but the cupcakes were definitely the center of attention.

The Steamy Kitchen couple; Jaden and Scott did a great job presenting.  They were inspiring, funny, and I loved how the whole family was involved in every part of the business.  White on Rice Couple; Todd and Diana were amazing.  They brought the audience to tears more than once, and their presentation was so moving and inspiring.

Sunday morning Whole Foods put on a brunch for us.  All of the food was delicious.  My favorite had to be the Biscoff Gelato though :)

After the brunch I spent the rest of the day with Katrina.  We stalked all the Star Wars characters at Epcot, before our flights back home.

It was such a fun weekend, and I am so glad I was able to attend.  The conference sold out in less than 5 minutes, so I feel pretty special to have gone!  Next year the conference is headed to North Carolina!

Tilapia with Tomatoes and Orzo

Tilapia with Tomatoes and Orzo #recipe

Summer is pretty much here.  Schools are getting out for summer, the temperatures are rising, and my garden is taking off.  With summer I often crave lighter meals.  It is just so hot, I don’t want something heavy to weigh me down.  Not to mention trying to fit into a bathing suit.  Lets just not go there :)

Alexia Review & Giveaway

Alexia Garlic Bread

Let’s talk sides for a minute.  Do you struggle with sides at your house?  I can easily pick a main dish, but to come up with sides that are good for you and that my family will like, is a struggle.  My family isn’t big on veggies, so salads and roasted veggies don’t always work.  I could love on Roasted Brussels Sprouts and Roasted Asparagus, but I am alone on that at my house.

Happy Memorial Day!! Do you have any fun plans for this unofficial kick off to summer? When I planned my calendar for May, I totally didn’t realize that I put muffins down for today. I should have been more on top of things! I did give you Frozen Key Lime Margarita Squares and Blue Vodka Lemonade last week though, both of those would be great additions to your get together today.

Key Lime Margarita Squares #recipe | Dinners, Dishes, and Desserts

I know I promised you that today I would share a recap and pictures from Food Blog Forum last weekend, but I forgot about these!  Today is Pass The Cookbook Club day.  Hopefully you will forgive me, because these little squares are way better than the pictures I was going to show you!  Don’t worry, a recap is coming; either Sunday or next Thursday.
