I couldn’t give you lots of Mexican recipes for Cinco de Mayo and leave out the margarita, could I?!  We have had Baked Chicken Taquitos, Teedo’s Famous Salsa that was perfect for chips or dipping the taquitos.  And last, but not least, there was the Cafe Rio Chicken Tostadas.  I still can’t get enough of the Cafe Rio chicken, so many different things you could do with that stuff (enchiladas, quesadillas, nachos, taco pizza etc.)  See, I think you are ready for one killer party!

Thursday Things

I swear the weather can not make up its mind this year!  On Monday we had 80′s, but by Wednesday it was snowing.  We got enough snow that school was cancelled!  It is a good thing the rest of the week is in the 50′s, so it will melt quickly, but this is just insane!  Anyway…. Is anyone else amazed that it is May already?  I have no idea where the time went.  It seems like just yesterday we were celebrating Valentine’s Day.  If today is the first day of May, you know what that means right?  Cinco de Mayo is only 5 days away!!  I will admit before I was a food blogger, the holiday meant nothing to me.  I would eat Mexican every day of the week, if my husband would let me, it doesn’t take a holiday for that!

Teedo's Famous Salsa

What an absolutely gorgeous weekend!  We had weather in the 70′s on Saturday and 80′s on Sunday.  We got lots of yard work done and enjoyed some time outside.  My 8 year old had a scrimmage flag football game on Sunday afternoon.  His team of 1st & 2nd graders played a team of 3rd & 4th graders, and won!  They were pretty excited, hopefully they can keep it up for their real game tonight!

Baked Chicken Taquitos

Today is an important day for two reasons.  First, it is my baby’s birthday!!!  I now have an 8 year old!  I can not believe how quickly he has grown up, and what a wonderful kid he is turning into.  He is smart, funny, creative, and super into sports.  He has his party with friends tomorrow night, and guess what they are doing?  Playing basketball and soccer.  Not a bad thing for a bunch of 2nd graders to burn off energy :)

I can’t believe I am posting 2 pizza recipes in one week.  I think I had 4 pizza recipes on the blog before this week.  You might think I have developed a bit of a problem.  Maybe I have, but are you really going to complain?  Chicken Tikka Pizza is a healthy pizza.  And this Roasted Veggie Pizza is pretty darn good for you as well.  The way I see it, the more healthy pizzas out there, the better!

Are you ready for the weekend?  I am so ready for relaxing and doing nothing.  We might go snowshoeing, but aside from that nothing is planned.  This was a crazy week with delays, and school cancellations, I am ready for it to be over.  Next weekend is my son’s birthday party, as well as another party for one of his friends (that involves a sleepover).  So I think we all need our rest now.
