Honey Oat Bread – a soft and tender bread with oats and sweet honey.  This is an easy no-knead bread that is great for toast, sandwiches, or even with soup for dinner. 
 
When you have homemade bread baking in the oven your house smells absolutely amazing!  There is nothing like it. And this oat bread is so easy to make, you are going to want to be making it every single week.  There is no kneading involved, so it is so much easier than other homemade breads.

What is No Knead Bread

 
Obviously it means that you just mix everything together and don’t have to spend time kneading it.  When you are making a traditional bread kneading is what develops the glutens and gives the bread the texture.  Not kneading the dough relies on the rising time to develop the gluten.  This bread has 2 separate rises, and that is what gives the bread the texture.  Normally a no knead dough is much wetter as well, and doesn’t develop the same crustier exterior that other breads do. 
 

How to Store Homemade Bread

 
This bread has a soft crust, so you can just wrap in plastic or foil and store for 3-4 days.  Because it does not contain any preservatives, it will not last more than a couple of days.  This recipe does make 2 loaves, so we usually eat one loaf right away and then freeze the second.  To Freeze Homemade Bread I let it cool completely.  Then wrap in a layer of plastic wrap followed by a layer of foil.  This ensures that it will not dry out in the freezer.  It will last for 2-3 months in the freezer.

How to Make Honey Oat Bread

  1. Yeast – the first step is to mix warm water and yeast together and let it bloom.  This means to let it sit for about 10 minutes until it starts to get foamy and puff up. 
  2. Mix – Next you mix everything together.  You can use a mixer or just a spatula.  You are not going to knead the dough, so you just want it to start to form a ball of dough. 
  3. Rise – Once it comes together and forms a ball of dough, place in a well oiled bowl and cover to let it rise until it doubles in size. 
  4. Form Loaves – Once the dough has rise, punch it down and divide into 2 equal loaves.  Roll into loaves and place on a baking sheet, or roll and put into loaf pans (these will take a little longer to bake). Then let the dough rise again. 
  5. Bake – to bake the bread brush with an egg wash to give it that nice shiny golden color.  Sprinkle with oats and then bake until golden brown.

Soft and tender homemade bread with oats and honey

This is very similar in taste to Subway honey oat bread, but in a different shape.  You could easily form into small loaves if you wanted to make sub buns instead of a whole loaf.  But you get the same slightly sweet, dense, while still soft and chewy bread.  It is great toasted with jam for breakfast, to turn into a sandwich or even with soup for dinner.

Ingredients 

  • 1 ¾ cup warm water
  • 1 Tablespoon Active Dry Yeast
  • ¾ cups quick-cooking oats
  • 1/3 cup honey
  • 3 Tablespoons Canola Oil
  • 2 ½ teaspoons salt
  • 5 cups about all purpose flour
  • 1 large egg, beaten
  • 1 Tablespoons water
  • 2 Tablespoons additional oats

Instructions 

  • Sprinkle the yeast over the water, and let set for 10 minutes until frothy. 
  • In a large bowl mix together the oats, honey, oil and salt, and the water.  Stir in enough of the flour to form a soft dough (I started with 4 ½ cups and went from there). 
  • Coat a large bowl with non-stick spray.  Transfer dough the bowl and turn it over to coat.  Cover with plastic wrap and then a kitchen towel.  Let rise for about 1 hour, or until doubled in volume.
  • Punch the dough down, and shape into 2 loaves.  I just free formed 2 loaves on a baking sheet.  But you could use loaf pans if you wanted. Cover and let rise for 20 minutes. 
  • Beat together egg want water. Brush over the loaves and sprinkle with the additional oats. 
  • Bake at 350 for 35-40 minutes.  When you knock on the bottom of the bread and it sounds hollow, it is done.
