Did you watch the Super Bowl last night? We watched it, had some snacks just the 3 of us, and relaxed for the night. My guys are obsessed with football, so pretty much no matter what they will watch the last game of the season. As a house I “think” we were cheering for Seattle. My husband was still mad the Packers lost, so I think in his ideal world, both teams would have lost. But he does like Russell Wilson (because he played at Wisconsin), so I think he was secretly pulling for them to win. So what did you eat? Any great snacks or appetizers?
Now that the hype is over, we can get back to normal. And normal means busy. So I have another quick, 1 skillet meal for you. Lasagna is classic comfort food, but it takes forever to make. It is definitely not a quick and easy weeknight meal.
Today we are changing all of that and making and easy lasagna skillet. In place of the layered casserole, we are using ravioli to accomplish most of the same flavors. It comes together in about 20-25 minutes, so it is perfect for any night of the week.
I used Italian sausage, but you can use ground beef or even leave out the meat if you want to make this a meat-free dish. Use your favorite homemade pasta sauce, or use a jar of store bought for an even easier dinner. This easy skillet lasagna makes great comfort food for a cold weeknight meal.
The Mid-West and the Northeast seem to be snowed in right now, so whip up a big pan of this skillet lasagna to please the whole family. Great served with a big salad or garlic bread. The leftovers make a delicious lunch the next day.

- 1 pound Italian sausage
- 1 cup onion , finely chopped
- 3 cloves garlic , minced
- 28 oz pasta sauce
- 1 1/2 cup chicken stock
- 1 cup Mozzarella cheese , shredded
- 2 (9 oz) packages cheese ravioli
In a large skillet brown Italian sausage over medium high heat. Add onion and garlic, cook until onion is soft.
Stir in pasta sauce, ravioli, and chicken stock. Cover and cook for 10-15 minutes, until the pasta is cooked.
Top with Mozzarella cheese. Heat until melted.
