This Spanish Rice with Sausage recipe is a flavorful, one-pan meal that’s perfect for busy weeknights! Made with smoky sausage, a box of Spanish rice, it has bold spices, it’s a quick and easy dinner the whole family will love. A simple and satisfying twist on classic Spanish rice!

I am kind of obsessed with one pan meals. Enchilada Pasta Skillet, Cheesebuger Macaroni Skillet, Mexican Rice Skillet, Sausage Pasta Skillet; to name a few. A skillet meal is just perfect for busy nights. A handful of ingredients (usually pantry staples), one pan, 20 (ish) minutes, and dinner is done. That has all the ingredients for a successful dinner at my house.
This Spanish Rice with Sausage takes a store bought box of Spanish Rice and turns it into a complete meal!

What You’ll Need

- Smoked Sausage – Any kind of smoked sausage will work great. I like Andouille the best because we like it a little spicy and it adds a lot of great flavor.
- Onion
- Bell Pepper
- Olive Oil
- Spanish Rice – whatever brand of Spanish rice you have works great. I used the kind that has a seasoning packet, so that is used in the recipe below.
- Diced Tomatoes
- Water – if you want even more flavor you could use chicken broth for this.
How To Make Spanish Rice with Sausage
- Brown Meat. Heat a large skillet over medium high heat. Add in the olive oil. Once it is hot add your sliced sausage as well as the onion and bell pepper. Cook for a few minutes until the sausage is browned and the veggies are soft.
- Add Rice. Pour in the box of rice and stir it in with everything else. You want to lightly toast the rice for just a minute or two.
- Add Liquid. Next pour in the tomatoes, water, and the seasoning packet that came with the rice. Mix everything together, bring to a boil, reduce heat, cover and simmer for about 20 minutes, until the rice is tender and cooked.
- Serve. Remove the skillet from the heat and serve immediately.

Spanish Rice with Sausage
Ingredients
- 2 Tablespoons olive oil
- 1 red bell pepper, chopped
- 1/2 cup onion, finely chopped
- 1 pound smoked sausage, cut into coins
- 1 box Spanish Rice
- 14.5 oz diced tomatoes
- 2 cups water
Instructions
- In a large skillet heat olive oil over medium high heat. Add onion, bell pepper and sausage. Cook until the onions are soft and the sausage is brown.2 Tablespoons olive oil, 1 red bell pepper, 1/2 cup onion, 1 pound smoked sausage
- Add rice, stirring to mix together. Saute until rice is lightly toasted.1 box Spanish Rice
- Stir in tomatoes, seasoning packet from the rice, and water. Bring to a boil Cover and reduce to a simmer. Cook for 15-20 minutes, until rice is tender.14.5 oz diced tomatoes, 2 cups water
- Serve immediately
