The focus of the holidays is usually all about the cookies. Frosted Sugar Cookies are a must every year, no matter what. But sometimes you need more than just cookies, right? And anything with mint is always a hit this time of year. Grasshopper Cupcakes are such a great treat.
This grasshopper pie has been a tradition in my husband’s family for as long as he can remember. It is the dessert they always have on Christmas. Since we met, it has quickly become a favorite of mine as well! My mother in law is always the one who actually makes it, so it was strange for me to actually make this for you!
Chocolate and mint is a classic combination. I think it should be had all year round, but lots of people deem it a holiday thing. Grasshopper Brownies are something I crave in the middle of summer, not just December. But this grasshopper pie recipe pretty much designated for Christmas day dessert.
This is such and easy no bake pie to make. It has an oreo pie crust and comes together in just minutes! The most you have to do is whip heavy cream to stiff peaks, and really you can just turn on your mixer and let that go to town. You don’t add any sugar or anything to the heavy cream. The marshmallows that you melt sweeten the pie, and then help give it structure, but still being super light and airy.
This grasshopper pie is best if you made it ahead of time. It needs to set in the fridge for at least an hour, but I think a day is better. It is so light and airy, it is great after you have a big meal like Prime Rib. You want to serve something sweet, but not something heavy and rich. Before dessert making the Perfect Turkey is a must! Then you can savor dessert even more.

- 24 Oreo cookies, , crushed
- 1/4 cup butter, , melted
- Pie Filling
- 24 large marshmallows
- 1/4 cup milk
- 3 Tbls Creme de Menthe
- 1 cup heavy cream
- Optional Garnish
- Extra crushed Oreo cookies
- Mix together the wafer cookies and the melted butter. Press into a pie plate to form the crust.
- To make the filling melt the marshmallows and milk together. Allow to cool. Meanwhile whip heavy cream to stiff peaks. Fold together cooled marshmallow mixture, whipped cream, and the creme de menthe. Pour into the crust. Sprinkle with additional chocolate wafer crumbs if desired.
- Let set in the fridge for at least 1 hour prior to serving. Store covered in fridge.
