Mint Chocolate Chip Brownies – rich, chocolate-y, fudgy brownies topped with a cool and creamy mint chocolate chip frosting.

We all know that brownies are one of my all time favorite desserts. lt can be a Gooey Brownie Pie or just having my pantry stocked with Homemade Brownie Mix, but brownies will forever be part of my life.

But then you top it with a mint chocolate chip frosting that tastes like my favorite ice cream and you have a dream come true dessert.

Why You’ll Love This Recipe

  • Nothing beats homemade brownies. But even if you are short on time, you can make these with a box mix and just top with the homemade frosting.
  • If you are a mint and chocolate fan, this is the ultimate! Grasshopper Pie is our traditional Christmas dessert, I love Mint Chip Ice Cream, and then these brownies are perfect for any other time.
  • These brownies are super fudgy and make a great base for any other recipe you want to use them in. Do you want to top with traditional Chocolate Frosting instead? Go for it!

What You’ll Need

  • Butter
  • Cocoa Powder
  • Sugar
  • Eggs
  • Vanilla Extract
  • Flour
  • Salt
  • Chocolate Chips
  • Powdered Sugar
  • Peppermint Extract
  • Milk
  • Green Food Coloring

How To Make Mint Chocolate Chip Brownies

  1. In a large bowl combine the melted butter, and cocoa powder. Mix until they are combined and it is nice and smooth.
  2. Beat in eggs, sugar, and vanilla until the eggs are fully incorporated.
  3. Stir in the flour and salt until just combined, and the flour streaks have just disappeared. Fold in the chocolate chips.
  4. Pour into prepared pan and bake. Once it is baked, let it cool completely before frosting.
  5. Meanwhile, prepare the frosting by, mixing everything except the chocolate chips together until you get a spreadable consistency. If it is too thin add more sugar, if too thick add a little bit more milk.
  6. Fold in the chocolate chips to the frosting.
  7. Once brownies have completely cooled, spread the frosting evenly over the top of the brownies.

Recipe Tips

  • Do not over mix. When you are making brownies you want to be very careful that once you add the flour you just mix until barely combined. You don’t want to see flour streaks, but you don’t want to beat it in there either.
  • I like to store these brownies in the fridge. It isn’t often I recommend that, and it isn’t necessary (there is nothing that requires it), but I think these taste best cold. Something about the cool mint frosting just shines at a colder temperature.
  • Store the brownies covered and they will last in the fridge for 4-5 days.
  • I baked these in an 8 inch baking dish. You can definitely double the recipe and bake in a 13×9 inch baking dish for super thick brownies like this. Or you can bake in a slightly larger than 8 inch pan for thinner brownies.

  • Remove from oven, and cool completely.
  • Meanwhile, prepare the frosting by, mixing everything except the chocolate chips together until you get a spreadable consistency. Adjust the sugar and milk as necessary.
  • Fold in the chocolate chips to the frosting.
  • Once brownies have completely cooled, spread the frosting evenly over the top of the brownies.
